We are beginning a new series at Babyminding called “Is This A Healthy Dinner?” That’s right! I’m going to tell you what I feed my kids for dinner and let you tell me if it’s healthy according to your standards. Seems like everyone has a different version of what’s healthy these days. For some, it just means skipping that second burger at the nearest fast food restaurant. For another, it’s eating strictly vegetarian or organic. For others, it’s a the traditional hunter/gatherer meal. For me, “healthy” generally means following the good ol’ food pyramid with a de-emphasis on the dairy. We love cheese and the occasional yogurt, but we don’t generally drink milk. Dinner time can mean family time, so here is my simple, healthy version of dinner:
Thursday Night Dinner – Total prep and cook time: 20 minutes
Whole wheat cheese quesadillas cooked in olive oil and a little butter (sometimes I add leftover chicken or steak)
Steamed broccoli with a little butter and sea salt
Apple slices
Dessert
Cinnamon Rice Chex and a few dark chocolate chips
Both kids gave this quick dinner a thumbs up! Tell me, do you think this is a healthy dinner? Feeding kids quick, healthy meals is one of my biggest challenges as a parent.
