Fruity Brown Rice Salad

Quick, easy, nutritious, and delicious, this salad is a great side dish to serve family and guests.

  • 2 cups cooked brown rice
  • 2 apples, peeled, cored and chopped
  • 1/4 cup chopped pecans
  • 1/4 cup dried cranberries
  • 1 cup vanilla or lemon yogurt
  • 1/4 cup of honey
  • 2 Tbsp lemon juice

Toss all ingredients in a bowl and serve.

I just made this and only used 1/2 cup of honey instead of 3/4 because it seemed like way too much (especially with the flavored yogurt). It was still crazy sweet so I looked on the freshbaby.com site & their recipe says 1/4 cup of honey, which sounds more realistic!! :)

I guess I’ll add more rice and yogurt to tone down the sweetness, I hope it freezes well!

(It also says 1/4 cup for the cranberries & pecans, but those are yummy!)
