Is This A Healthy Dinner? Chicken Parmesan

Who says you have to pick up fast food for your kids when you are out of time? I threw together this quick and healthy dinner last night in 30 minutes… and believe me I’m no friend to the kitchen. I’m trying to limit my children’s fast food intake to twice a month, and of course that rule can be hard to maintain. Babyminding’s “Is This A Healthy Dinner?” series offers simple meal ideas for the health minded parent. Here is what we had last night… do you think this is a healthy dinner?

Tuesday Night Dinner – total cook time 30 minutes:

  • Fortified pasta: I used elbow macaroni with extra calcium, vitamin D, and fiber.
  • Chicken tenders: I cooked the chicken tenders in a skillet with some butter and olive oil. While they cooked, I sprinkled the tenders with spices and panko style bread crumbs.

I layered the pasta and sauce then topped it with chicken tenders. Finally, I sprinkled a generous helping of Parmesan cheese on top! The children enjoyed water and juice to drink and one small dark chocolate truffle for desert. I like this meal because my kids get a generous helping of tomatoes without really realizing they are getting their vegetables. While my kids eat veggies, they eat the same ones over and over again, so I’m trying to expand their horizons. This dinner is full of calcium, protein, and fiber. There are few things more frustrating than cooking dinner and having no one eat it, so the most important question is did my kids eat this healthy dinner? I’m happy to report they did!   1. This is a favorite in our house as well! I make my own breading using Ezekiel sprout bread or an organic, non-gmo whole grain, fresh Italian parsley, chopped garlic, grated Parmesan, salt, pepper & a little bit of olive oil – put it all in a food processor/chopper and mix. I pound the chicken, dip in egg and then coat in breading. Bake at 350 degrees for 20-25 minutes – top with fresh mozzarella during the last 5-10 minutes. Serve with your favorite pasta and marinara. I you want to reduce the calories, only bread one side of the chicken – still tastes yummy!
